Peach Mule Mocktail

Peach Mule Mocktail 2000 1333 The Flyer Magazine

Summer is the perfect season to whip up my delicious Peach Mule Mocktails. These thirst quenching delights are special and eye catching, and if you decide to swap out the Seedlip alcohol free spirit for your favourite gin or vodka I won’t tell anyone.

Ingredients – for one cocktail
60 mls Seedlip Grove 42 Citrus
2 wedges of lime
Ginger beer
3 blueberries
2 slices of fresh peach
Mint leaves

Peach Syrup – makes 2 cups
2 cups water
2 cups white sugar
4 peaches

Method
For the syrup, bring sugar and water to the boil and add sliced peaches.

Simmer for 15-20 mins stirring occasionally to make sure it doesn’t catch.

Strain, discard the pulp, and set aside to cool.

Once the syrup has cooled, we are ready to make a cocktail!

In a highball glass, rim the glass with 2 pieces of lime and place in the glass.

Top with a lot of ice. To the top of the glass.

Add a few blueberries.

Add 60mls Seedlip, top until just off the top off the glass with ginger beer.

Add 60mls of peach syrup.

Garnish with mint and sliced peach.

*you need a lot of ice for a few reasons, but the main one here is if you don’t have enough you will add too much ginger beer and the drink won’t be balanced.
