Miso Glazed Side of Salmon

When deciding on a hero piece for the Christmas day I can’t go past a side of salmon. It is impressive – a treat and DELICIOUS, but doesn’t leave that heavy feeling that some other options do.

You can get a side of salmon, or the whole fish, by preordering from Harbourfish in Frankton.

The glaze can be made a day in advance and the prep is only five minutes on the big day.

This is a winner in our family and I know your loved ones will enjoy it as well.

Side of salmon approx. 1-1.5 kilos
½ cup mirin|
¼ cup + 2 tablespoons caster sugar
½ cup miso

Kaffir lime leaf – vein removed and thinly sliced
Sesame seeds

• Put salmon on a baking tray lined with baking paper
• Mix glaze ingredients together and spoon over salmon. Use a whisk if there are any lumps in the glaze.
• Cook at 180 for 12-15 mins until cooked.
• Remember it will keep cooking while still on the tray.
• When it is cool enough to handle, move the salmon on to your serving platter or board. Be aware there will probably be drips.
• Scatter on your garnish and serve!
• We had ours with a green salad with edamame and seaweed, and
Asian Slaw.
